AC Legg Snack Stick Seasoning:
Salt, Dextrose, Sugar, Spices, Mustard (1.35%), Garlic Powder, Sodium Erythorbate (7/32 0z.)
and less than 2% tricalcium Phosphate added as an anticaking agent.
Breakdown for less than a 25 lb. batch - 7 Tablespoons of seasoning per 5 lbs. of meat

collagen casings are designed for a Smoked Slim Jim style sausage snack sticks and can be used for Fresh Pork Sausage, Fresh Breakfast Sausage and Smoked Frankfurters.
Sold in 50 foot lengths. 50 feet will stuff approximately 8 1/2 lbs. of raw meat.
They are 21 mm in diameter, and when they are finished smoke/cooking, they will be just a little larger in diameter than a Slim Jim. (19mm = .748 inches. Approximately

I just bought your 50 lb deer sausage kit and your 25 lb snack stick kit and some cheddar and pepper jack cheese. It is hands down the best tasting sausage I've ever ate. Everyone that has tried it agrees. Its much better then the summer sausage I've had made at different butchers and better then any other mix I've used. The kit comes with everything but the meat and even has extra bags and tubes included rather then the typical kit that always comes up short. I will never buy another brand again. Your collagen casing do NOT need to be soaked in water before using. [They can be soaked in water if you prefer - they can be stuffed dry or wet.] Also, if your stuffing horn is long enough, it is best (and fastest) to put the whole 50 foot tube on the horn. Just stuff the whole 50 feet with snack stick meat. Then cut the 50 foot long casing into pieces that will fit your smoker or oven.
