I’ll answer your second question first.

With 50 lbs. of raw rounds, you should have about 40 lbs. of finished meat after cooking.  A average figure is 1/3 of a pound of meat per person.  So your 40 lbs. of rounds should feed approximately 120 people.  So this should be enough for your 100 guests.

To determine what amounts you will get, I will have to estimate since you did not have the hanging weight of the side of beef.  So these will be average amounts and might vary somewhat with your actual side of beef.

T-bone steaks – 20 steaks (or 10 pkg. With 2 to a package)
Sirloin steaks    - 10 steaks (or 5 pkg. With 2 to a package)
Rib Steaks        - 18 steaks (or 9 pkg. With 2 to a package)
(I see you have marked rib steaks and rib roasts – so it’s possible you might get 1 rib roast and 14 steaks or something like this.)
Short Ribs      - 4 pkg with 2 short ribs to a pkg.
Soup Bones     - 2 to 4 soup bones
Rump Roast   1 to 2 depending on weight of side of beef
(I didn’t see you ordering any chuck or arm roast.  I take it you will have these put into ground beef and stew meat.)
Stew Meat   - Varies.  A good estimate might be 10 lbs.
Ground Beef    - Again it depends on how large the side of beef was.  Without knowing the weight and how much fat it had, I’ll assume the pounds of ground beef to be between 60 and 80 lbs., figuring it was an average size (250 lbs. hanging weight) side of beef.
