It seems that each barbecuer has his own special list of what utensils are essential.

I feel that there are 5 main utensils:

1.  An internal meat temperature thermometer.

2. An air temperature thermometer to read the air temperature inside your grill.

3. Hi temperature gloves (or welder gloves) to move the hot coal around or to pick out fallen meat.

4. A good pair of tongs to turn your meat on the grill. I never use a fork. The punctures in the meat lets valuable moisture and flavor escape the meat.

5. A cooler to put the finished meat in. To keep it warm and away from insects.
