cuts of beef and weights to expect from a side beef

I’ll
answer your second question first.

With
50 lbs. of raw rounds, you should have about 40 lbs. of finished meat
after cooking.
A average figure is 1/3 of a pound of meat per person.
So your 40 lbs. of rounds should feed approximately 120 people.
So this should be enough for your 100 guests.

To
determine what amounts you will get, I will have to estimate since you did
not have the hanging weight of the side of beef.
So these will be average amounts and might vary somewhat with your
actual side of beef.

| T-bone
steaks – 20 steaks (or 10 pkg. With 2 to a package)

- 10 steaks (or 5 pkg. With 2 to a package)

the pounds of ground beef to be between 60 and 80 lbs., figuring it was an
average size (250 lbs. hanging weight) side of beef. |
